The Back of House Staff is responsible for consistent preparation of menu items in accordance with the Waco Surf Food and Beverage department.
Must adhere to all food safety and sanitation regulations.
Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, grills, fryers and a variety of other kitchen equipment.
Prepares items for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and/or marinating.
Assumes 100% responsibility for quality of products served.
Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, sauté burners, flat top range and refrigeration equipment.
Knows and complies consistently with standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
Open and close the kitchen properly and follow the opening/ closing checklist for kitchen stations.
Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
Portions food products prior to cooking according to standard portion sizes and recipe specifications.
Follows proper plate presentation and garnish set up for all dishes.
Handles, stores and rotates all products properly
Label and stock all ingredients on shelves so they can be organized and easily accessible.
Follow the prep list created to plan duties.

Properly washes, stacks, and stores china, glassware, silverware, cookware, and storage containers.
Assists in the timely storing of food deliveries.
Handles, stores and rotates all products properly.
Performs inventory checks and completes food storage logs as assigned by management.
Assists in food prep and cleaning assignments during off-peak periods as needed.
Assists others in tasks and cleaning.
Participate in daily pre-shift meetings and any scheduled employee meetings
Perform routine kitchen tasks.
Performs other related duties as assigned by the Chef, Kitchen Manager, or manager-on-duty.
Experience and Qualifications
Previous experience in a kitchen or food preparation a plus but not mandatory
Basic written and verbal communication skills
Maintain current Food Handler certifications required per state law.
Experience with various cooking methods and procedures
Familiar with industry best practices
Ability to work as a team member
Follows directions and instructions
Ability to comply with physical demands as outlined below.
Ability to compute basic mathematical calculations.
Maintain a flexible work schedule.
